<p><strong>The Yucatán’s most emblematic Honey, laced with Morita Chiles.</strong></p> <p>A few years ago, we embarked on a project with our friend Gonzalo Samaranch of Mestiza de Indias to protect endangered species in the Yucatán Peninsula. Here, in the thickest jungle and most pristine landscape, the Yucatán’s most emblematic Honey is produced by Indigenous Beekeepers. The Honey is called Dzidzilché, foraged solely from Gymnopodium floribundum — a sacred tree native to the Peninsula.</p> <p>It is pure, monofloral, and intense — with an exquisite flavor that evolves from sweet to slightly spicy. We then took regeneratively-grown Morita Chiles and carefully infused them to achieve a smoky, deeply savory heat.</p> <p>This elixir is all depth and big impact. Drizzle over crispy buttered waffles, grilled Summer corn, or fresh cheese, if in need of warmth, intensity, and a little fire.</p>
